Serves: 6 apples


Ingredients:

  • 6 large Rome apples, peeled and cored
  • 6 tablespoons unsalted (sweet) butter, softened
  • 1/2 cup lemon juice
  • 1 teaspoon grated lemon rind
  • 1/2 teaspoon white stevia powder
  • 1 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground cardamom
  • 1/4 cup currants
  • 1/4 cup coarsely chopped almonds or pecans

Directions:

  1. Preheat the oven to 325°F.
  2. Using a sharp knife, remove a 1/4 inch piece from the top of each apple. Peel 1/4 inch of skin from the top, and core each apple to within 1/2 inch of the bottom. Set aside.
  3. Cream the butter with the lemon juice and lemon rind, then add the remaining ingredients. Spoon even amounts of this mixture into the cored apples.
  4. Place the filled apples in a shallow baking pan, add a little water to cover the bottom, and bake for about two hours, or until tender. Serve hot, warm, or chilled.
