Asian flavors meet summer veggies in this tangy and refreshing chilled cucumber salad.
Serves: 4
Ingredients:
Salad:
- 3 medium cucumbers
- 1/2 medium white onion, thinly sliced
- 2 stalks celery, thinly sliced diagonally
Dressing:
- 3 tablespoons apple cider vinegar
- 3 tablespoons tamari, or other soy sauce
- 1 tablespoon Dijon-style mustard
- 1 tablespoon freshly grated ginger
- 1/2 teaspoon coriander
- 1/8 teaspoon white stevia powder
Directions:
- Peel the cucumbers, quarter them lengthwise, and thinly slice. Place them in a salad bowl along with onion and celery.
- Combine all of the dressing ingredients in a small bowl or glass jar and mix well. Add the dressing to the vegetables and toss well.
- Cover the bowl and chill in the refrigerator for at least 2 hours before serving.
