Embrace the health benefits of hijiki, a highly nutritional brown seaweed, with this crunchy, Asian-inspired slaw sweetened with stevia.

Ingredients:
Slaw:
- 1/2 cup dried hijiki
- 1/2 medium green cabbage
- 1/2 medium red cabbage
- 1 medium cucumber, peeled and thinly sliced
- 1 medium red bell pepper, thinly sliced
- 1 tablespoon Herbamare, or sea salt
- 1 tablespoon organic, unrefined sesame oil
- 2 teaspoons tamari, or other soy sauce
- 1 teaspoon sea salt
- 1/4 cup sesame seeds for garnish (optional)
Dressing:
- 1/2 cup apple cider vinegar
- 1/2 cup Garlic-Chili-Flaxseed Oil Dressing
- 2 teaspoon grated lemon rind
- 1/2 teaspoon coriander
- 1/8 teaspoon white stevia powder
Directions:
- Soak the hijiki in cold water for 15 to 20 minutes. Squeeze out the excess water and coarsely chop.
- While the hijiki is soaking, finely grate the cabbage in a food processor.
- Combine the cabbage, hijiki, cucumber, bell pepper, Herbamare, sesame oil, tamari and salt in a large bowl and toss well.
- Combine all of the dressing ingredients in a small bowl or jar and mix together. Pour the dressing over the slaw and toss well.
- Cover the bowl and chill in the refrigerator for several hours.
- Garnish with sesame seeds, if desired, before serving.
